Wanda’s Chicken

This is one of the best chicken recipes you will ever taste-one of our family favs!

Prep Time: 15 minutes (but marination takes 2 hours)

Cook Time: 40 minutes

Ingredients
  • 4-6 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 4 cloves garlic, cut into pieces
  • 1-2 sleeves of whole wheat crackers (or just regular Ritz)
  • 1/2 cups parmesan cheese
  • 1/2 cup grated cheddar cheese
Directions:
  1. Take boneless, skinless chicken breasts and marinate in vegetable oil and cut up garlic for at least thirty minutes. I usually do a couple of hours.
  2. Mix crushed crackers with parmesan cheese and grated cheddar cheese.
  3. Roll chicken in the cracker mixture.
  4. Place on cookie sheet but do not let pieces of chicken touch each other so they will cook evenly.
  5. Bake on 350 for 40 minutes. Be sure not to overcook b/c it gets dry.
