Sloppy Joes

A spin on a tradtional favorite packed with veggies and you can’t even tell it!

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients
  • 1.25 lbs. 90/10 hamburger
  • 1-2 carrots, or 15 baby carrots, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, chopped
  • 4 stalks of celery, chopped
  • 1/4 cup red bell pepper, chopped
  • 4 oz mushrooms, minced (Note: You can do ANY veggies you like!)
  • 1 tbsp red wine vinegar
  • 1 tbsp Worcestershire sauce
  • 2 cups tomato sauce
  • 2 tbsp tomato paste (can sub a can of diced tomatoes for this)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • ½ tsp Himalayan or sea salt
  • 1 tsp black pepper
  • ½ tsp cumin
Directions:
  1. Chop all the vegetables really, really fine, using a chopper or food processor.
  2. Heat a large skillet over medium high heat.
  3. Add the meat to the pan and break it up as it cooks.
  4. Add onion, garlic, carrots, mushrooms, celery, and red peppers to the skillet.
  5. Reduce heat to medium and add red wine vinegar, Worcestershire sauce, and spices. Cook 5 more minutes.
  6. Add tomato sauce and paste to pan, stir to combine.
  7. Cover and reduce heat to simmer and cook an additional 5 minutes.
Serve With:

Serve on whole grain buns. I serve this with green beans. Sometimes I make a side of pasta like shells or macaroni for the kids, too.
