
Sloppy Joes
A spin on a tradtional favorite packed with veggies and you can’t even tell it!

Ingredients
- 1.25 lbs. 90/10 hamburger
- 1-2 carrots, or 15 baby carrots, chopped
- 1 medium onion, chopped
- 4 cloves garlic, chopped
- 4 stalks of celery, chopped
- 1/4 cup red bell pepper, chopped
- 4 oz mushrooms, minced (Note: You can do ANY veggies you like!)
- 1 tbsp red wine vinegar
- 1 tbsp Worcestershire sauce
- 2 cups tomato sauce
- 2 tbsp tomato paste (can sub a can of diced tomatoes for this)
- 2 tsp garlic powder
- 2 tsp onion powder
- ½ tsp Himalayan or sea salt
- 1 tsp black pepper
- ½ tsp cumin
Directions:
- Chop all the vegetables really, really fine, using a chopper or food processor.
- Heat a large skillet over medium high heat.
- Add the meat to the pan and break it up as it cooks.
- Add onion, garlic, carrots, mushrooms, celery, and red peppers to the skillet.
- Reduce heat to medium and add red wine vinegar, Worcestershire sauce, and spices. Cook 5 more minutes.
- Add tomato sauce and paste to pan, stir to combine.
- Cover and reduce heat to simmer and cook an additional 5 minutes.
Serve With:
Serve on whole grain buns. I serve this with green beans. Sometimes I make a side of pasta like shells or macaroni for the kids, too.
