Quesadillas

This is a simple recipe when time is short and you need something quick!

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients
  • Ole Xtreme Wellness High Fiber Tortillas
  • Olive oil (or butter)
  • Shredded cheese of your choice
  • Shredded Chicken Breast (I like to get the day-old Rotisserie breasts at Sam’s Club)
  • Veggies of choice (I use banana peppers)
Directions:
  1. Melt 1 tsp olive oil (or butter) on medium heat on stovetop. I use a cast iron pan.
  2. Lay one tortilla on melted oil or butter.
  3. Spread cheese, chicken breast, and veggies on tortilla. Cover with second tortilla.
  4. Let cheese melt and first tortilla get slightly brown. Flip (carefully) and let other side brown.
  5. Slice into eight pieces with pizza cutter.
Serve With:
