
Quesadillas
This is a simple recipe when time is short and you need something quick!
⏲ Prep Time: 5 minutes
⏳ Cook Time: 10 minutes
Ingredients
- Ole Xtreme Wellness High Fiber Tortillas
- Olive oil (or butter)
- Shredded cheese of your choice
- Shredded Chicken Breast (I like to get the day-old Rotisserie breasts at Sam’s Club)
- Veggies of choice (I use banana peppers)
Directions:
- Melt 1 tsp olive oil (or butter) on medium heat on stovetop. I use a cast iron pan.
- Lay one tortilla on melted oil or butter.
- Spread cheese, chicken breast, and veggies on tortilla. Cover with second tortilla.
- Let cheese melt and first tortilla get slightly brown. Flip (carefully) and let other side brown.
- Slice into eight pieces with pizza cutter.
Serve With:
Fage Greek yogurt, Fresh Salsa, and Salad
