Crockpot Lasagna

Crockpot Lasagna

This is a delicious spin on lasagna. Simply throw it in the crockpot and forget it!

Prep Time: 20 minutes

Cook Time: 4-5 hours

Ingredients
  • 9 whole wheat lasagna noodles (or regular lasagna noodles)
  • 1 pound lean ground beef, browned and drained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 1/2 cups spinach
  • 1 jar (28 oz) spaghetti sauce
  • 1/4 cup water
  • 1/2 carton (8 oz) low-fat cottage cheese
  • 1/2 carton (8 oz) ricotta cheese
  • 1 egg
  • 1 1/2 cups mozzarella cheese, grated
Directions:
  1. Brown and drain hamburger. Add Italian seasoning and garlic powder to hamburger.
  2. Mix cottage cheese, ricotta cheese, and egg.
  3. Break noodles in halves.
  4. Layer in this order: Noodles, Meat Mixture, Spinach*, Sauce, Water, Cottage/Ricotta Cheese Mixture, and Mozzarella.
  5. Repeat the process for two layers.
  6. Sprinkle additional Italian seasoning and garlic powder on top, if desired.
  7. Cover and cook on low for 4-5 hours.

Note: I chose to sauté the spinach and mix it in with the hamburger instead of layering it by itself. I also mixed the water into the sauce instead of doing it separately.
