
Crockpot Lasagna
This is a delicious spin on lasagna. Simply throw it in the crockpot and forget it!

⏳ Cook Time: 4-5 hours
Ingredients
- 9 whole wheat lasagna noodles (or regular lasagna noodles)
- 1 pound lean ground beef, browned and drained
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 1/2 cups spinach
- 1 jar (28 oz) spaghetti sauce
- 1/4 cup water
- 1/2 carton (8 oz) low-fat cottage cheese
- 1/2 carton (8 oz) ricotta cheese
- 1 egg
- 1 1/2 cups mozzarella cheese, grated
Directions:
- Brown and drain hamburger. Add Italian seasoning and garlic powder to hamburger.
- Mix cottage cheese, ricotta cheese, and egg.
- Break noodles in halves.
- Layer in this order: Noodles, Meat Mixture, Spinach*, Sauce, Water, Cottage/Ricotta Cheese Mixture, and Mozzarella.
- Repeat the process for two layers.
- Sprinkle additional Italian seasoning and garlic powder on top, if desired.
- Cover and cook on low for 4-5 hours.
Note: I chose to sauté the spinach and mix it in with the hamburger instead of layering it by itself. I also mixed the water into the sauce instead of doing it separately.
