Copycat Panera Turkey Chili

I’m in love with Panera’s turkey chili, so I decided I must make it at home so it’s cheaper, healthier, and I can have leftovers!! Bonus is that it’s all of that but also packed with protein! Here you go! If you would like to see a video of the process, click here.

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients
  • 1 tsp olive oil
  • 1 pound ground turkey
  • 3 cloves of garlic, chopped or minced
  • 1 medium onion, chopped
  • 1 jalapeño, chopped
  • 1 cup sliced carrots
  • 1 can tomato paste (12 ounces)
  • 1 can kidney beans (15 ounces)
  • 1 can garbanzo beans (15 ounces)
  • 1/2 cup corn, frozen or canned
  • 1 cup shelled edamame, frozen
  • 1 carton beef broth (32 ounces)
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 T garlic powder
  • 1 T onion powder
  • 1/2 tsp chili powder
  • 1/2 tsp coarse black pepper
  • 1/2 tsp sea salt
Directions:
  1. Add olive oil to pan and heat to medium. Add turkey and brown.
  2. Chop onion, jalapeno, carrots, and garlic. Add to turkey. Cook until veggies are tender.
  3. Add tomato paste, kidney beans, garbanzo beans, corn, edamame, beef broth, and spices.
  4. Bring to slow boil. Reduce heat to simmer for 30-45 minutes.
  5. Serve with side of choice. Put in your belly! Yum!
